It is carried out twice a year from \u003cbr\u003eApril to July and October to December. the cherry pickers extend their \u003cbr\u003ehands to pick only the red-ripe cherries one by one, guaranteeing the finest quality \u003cbr\u003ecoffee. From there the cherries go through hand sorting to remove the unripes and \u003cbr\u003eover-ripes, which are later naturally processed.
